Somewhere between a dessert and a moment, this show-stopping dessert tastes of flowers and drips with elegance. Floral and lightly sweet, it’s the kind of thing that looks far more considered than the effort involved.
What you’ll need:
- 600ml freshly brewed The 30 Plants Herbal Tea (use 3 tsp of loose leaf for a flavour that holds through the set)
- 40g caster sugar or 2 tbsp honey (a touch sweeter than you’d take your tea — it mellows as it cools)
- 6g agar agar powder
- Rose petals or dried flowers from the Herbal Tea mix, to decorate
Method:
- Brew the Herbal Tea at just-boiled water for 5–6 minutes to get a strong, flavourful base. Strain well.
- While still hot, stir in the sugar or honey until fully dissolved.
- Add the agar agar powder and whisk gently until completely dissolved — don’t let it clump.
- Pour into 4 small bowls, moulds, wine glasses or small glass jars.
- Leave to cool to room temperature, then transfer to the fridge for at least 2 hours.
- To serve, flip onto a plate, or serve directly in the bowl.
- You can top them with fresh whipped cream for extreme indulgence.
- Scatter with rose petals, flowers from the Herbal Tea mix, or fresh mint leaves.
