This high-ROI hummus comes together in minutes using whatever canned legumes you have in the cupboard — chickpeas, beans, lentils, all work beautifully. The spices do the heavy lifting on flavour.
What you'll need:
- 1 can of chickpeas, beans, or lentils (drained, liquid reserved)
- 1 tbsp The 30 Plants House Blend
- 1 garlic clove
- Juice of 1/2 lemon or lime
- A good glug of extra virgin olive oil
- Tahini — a couple of tablespoons (or any nut cream; peanut butter works a treat)
- Salt to taste
- Reserved liquid from the can, to loosen the mix if you don't like it too thick (optional)
To serve: fresh veg for scooping, tarallini, or breadsticks.
Method:
- Drain your can of legumes, keeping the liquid to one side.
- Add the legumes to a blender or food processor with the House Blend, garlic, citrus juice, olive oil, and tahini or nut cream.
- Blitz until smooth.
- If it's too thick for your liking, add a splash of the reserved liquid and blitz again until you reach your preferred consistency.
- Taste and adjust — more lemon, more oil, more salt. Make it yours.
- Serve with fresh veg, breadsticks or tarallini.
- Instant win.
Any can in the cupboard, any nut cream in the jar — this one's impossible to get wrong.
